WHere is a home-style interpretation of a drink found on a new menu. This is a batch prepared mix that's packed with flavours associated with festive period, which makes it ideal for hosting a festive gathering. Save the extra cordial for morning drinks, puddings, or for more rounds of the drink.
The Bikini Cocktail
Serves 10 guests
To make the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Drink (makes 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Method
To prepare the Citrus Syrup: Place the listed items inside a saucepan, bring to a light boil, stirring so the sugar melts. After that, remove from the stove allowing it to reach room temperature entirely. Pour to a clean bottle, cap it keeping it in the fridge, it will last for around four weeks.
For the Batch Mix: Mix all the liquid ingredients into one big jug, allow it to infuse for 60 minutes, then pass it through preferably using cheesecloth, making it completely strained.
When ready to serve: Add 85ml of your premix to a mixing glass filled with ice, and stir gently for a minute until cold. Filter into a cold coupe glass or equivalent, top with the cranberries and complete it by giving it a brief mist of mandarin oil above the glass.
